Long, sinewy, consistent. It is the only tomato that does not crush during processing, it remains entire and unaltered in the tin.
Only with this fruit it is possible to obtain a high quality peeled tomato of supreme flavour. the protected Designation of Origin designates exclusively the “peeled” product and the “sliced peeled” type coming from the processing of fruits that belong to the San Marzano ecotype or enhanced lines of the same.
The product presented for consumption has to have precise technological characteristics : an even red colour with colorimetric ratio a/b, elongated and parallelepiped shape, no foreign tastes or odours, weight of drained product not less than 65% of the net weight, refractometry residue not less than 4%. It is permitted to add at most 3% of salt , basil leaves, semi-concentrated tomato juice , but only that of S. Marzano.
